Sfizioso contrasto in questo stufato tra l’amarognolo delle puntarelle e la carne d’agnello tenera e delicata. Volendo, per farne un piatto unico, potete accompagnarlo con del riso.
Dose per 4 persone.
Ingredienti
800 g di anteriore di agnello
250 g di puntarelle
2 zucchine
2 cucchiai di olive taggiasche denocciolate
rosmarino
1 costa di sedano
1 cipolla
olio extravergine d’oliva
sale e pepe
Sbucciare la cipolla, affettarla, lavare il sedano e tagliarlo a rondelle. Far appassire in un tegame con un cucchiaio di olio la cipolla e il sedano quindi unire la carne tagliata in pezzi regolari e rosolarla per qualche minuto.
Aggiungere il rosmarino, le olive, sale e pepe, coprire con un coperchio e cuocere per circa 20 minuti. Tagliare le zucchine a pezzetti, pulire le puntarelle dividendo i germogli quindi unire il tutto all’agnello e cuocere ancora per 10 minuti. Regolare di sale e pepe ed impiattare.
